In a pot, add enough water to fill halfway and bring to a boil. Add the potatoes, cut into chunks, along with salt and a peeled garlic clove.

When the potatoes are cooked, add the egg whites and stir until they set.

In a blender cup, combine the egg yolks with a little lemon juice, salt, olive oil, and a bit of the cooking broth. Blend until smooth.

Add this mixture to the pot and stir over medium heat. Adjust salt to taste.
