We have been making this for well over 10 years and the recipe has never changed. We sometimes cook this for less and put the trays in the freezer serving frozen. For a gourmet version chocolate chips can be added but we feel it's not necessary.

Whisk eggs and sugar together until double in size

Slowly pour in the oil ensuring you keep the whisk on a fast speed

Carefully fold through remainder of ingredients

Cover base of cooking tray with baking parchment and split the mix between 5 trays

Bake at 180oC for 20 minutes depending on how soft and fudge like you want.

Allow to cool and cut 8 by 4 (32)
