Stir Fry Sliced Fish with Ginger and Spring Onion

Ingredients

3-4 servings
  1. Marinate
  2. 300 grSliced Fish
  3. Halfan egg white
  4. 2 tspFresh Ginger Juice
  5. 3 tspCornflour
  6. 1/2 tspSalt
  7. 1/2 tspChicken Stock Powder
  8. a fewdashes of white pepper
  9. Blanche
  10. 1pan of water, enough to scald the fish fillet
  11. 2 slicesGinger
  12. 1 stalkSpring Onion
  13. Marinated Fish Fillet
  14. Stir Fry
  15. 1 tbspcooking Oil
  16. 2thumb size ginger, sliced
  17. 3 clovesgarlic, minced
  18. 1 cupwater
  19. 1.5 tbspOyster Sauce
  20. 1/2 tspChicken Stock Powder
  21. 1/2 tspSugar
  22. 1/2 tspSalt
  23. add blanched fish
  24. thicken sauce with cornstarch solution. 1tsp to 3tsp water
  25. 4 stalksspring onion, cut into 1 inch length
  26. 1.5 tspsesame oil
  27. 1 tbspchinese cooking wine

Cooking Instructions

    Marinate fish with marinating ingredients for 15 min.

    Heat up a pan of water. Blanch the marinated fillet with the blanching ingredients when water has boiled.

    Remove fish when its cooked. About 3-5 min.

    Heat 1tbsp oil on a pan, add sliced ginger and stir until fragrant.

    Add minced garlic and stirfry.

  6. 6

    Add 1 cup of water and stirfry ingredients.

  7. 7

    Once sauce has slightly thickened, fish is ready to be served.
