It's a hot day, too hot to cook. Leftover gnocchi and parmesan in the fridge; a few Sicilian olives begging to be eaten; Roma tomatoes on the chopping block.

It's a hot day, too hot to cook. Leftover gnocchi and parmesan in the fridge; a few Sicilian olives begging to be eaten; Roma tomatoes on the chopping block.

Ingredients

  1. 1 cuppre-cooked potato gnocchi
  2. 3juicy Roma tomatoes, cut into eighths
  3. 5-6good quality olives, chopped
  4. 1 Tbextra virgin olive oil
  5. Shredded parmesan cheese (I used a scant handful.)
  6. Fresh ground black pepper
  7. Salt to taste

Cooking Instructions

    Put cut tomatoes and olive pieces in a bowl with olive oil and stir

  2. 2

    Add gnocchi and toss

  3. 3

    Incorporate half of the parmesan cheese

  4. 4

    Taste to see if it needs salt and salt accordingly

  5. 5

    Sprinkle on the rest of the cheese & grate on black pepper to taste

  6. 6

    Enjoy!
