Mutton Paya Soup is delicious and flavorful soup made with lamb trotters. It is not as clear as other soups. It is little thicker in consistency. Made with flavorful spices, it is truly a non-veg lover’s delight.

Mutton Paya Soup is an excellent breakfast dish served with idli, spong dosa, appam or iddiyappam. It is also enjoyed for dinner.

Mutton legs are cleaned and pressure cooked. Onion tomato paste is made by sautéing onion, tomato, ginger, garlic, green chili. It is puréed and added to cooked paya broth along with spice powders and coconut cashew milk. Lastly seasoned with whole garam masala. For this dish use green chili and pepper powder for spice with very little amount of chili powder.

Serve this delicious-spiced Mutton Paya Soup for breakfast or dinner with idli, spongy dosa, idiyappam or appam.

Ingredients

4 persons
  • To cook Goat legs :
  • 8Goat legs (cut into 3 pieces)
  • 1/2 inchginger
  • 1/4 tspturmeric powder
  • Onion-Tomato paste :
  • 1medium-size onion
  • 1medium-size tomato
  • 1 inchginger
  • 5garlic pods
  • 2green chili
  • 1 tspoil
  • For making stew :
  • 1/4 cupfresh coconut, grated
  • 6cashews
  • 1 tbspcoriander powder
  • 1 1/2 tsp pepper powder
  • 3/4 tspKashmiri chili powder
  • 1/4 tspturmeric powder
  • to tasteSalt
  • 5 stalkcoriander leaves
  • For seasoning :
  • 1 tspcumin
  • 1 tspsaunf
  • 1 inchcinnamon
  • 2cloves
  • 2cardamom
  • 1star anise
  • 1 sprigcurry leaves

Steps

  1. 1

    Coat goat legs with maida and scrape it with a blunt knife to remove blackened bits and hair residue. Soak in turmeric water, wash with water and drain.

    In a large pressure cooker, take cleaned goat legs, add enough water to cover it. Add crushed ginger and turmeric powder. Pressure cook for 8-10 whistles until the legs are cooked well.

    To make onion-tomato paste heat oil in a pan. Add in roughly chopped onion, garlic, ginger and sauté until onions are translucent. Add roughly chopped green chili, tomato and cook until tomatoes are soft. Add little salt to soften tomatoes faster.

    Cool the mixture completely and transfer to a mixer jar. Add water as required and grind to a fine paste.

    Add this paste to cooked legs and cook it until raw smell goes away. Add coriander powder, pepper powder, chili powder, turmeric powder, salt and further cook until oil separates.

    Meanwhile in a mixer jar take grated coconut, cashews and grind to a fine paste. Strain it through a sieve to get coconut milk.

    Add coconut milk to the paya and simmer it for few minutes. Check for salt and spicy. Add pepper powder for spicy. Gravy should be medium thin in consistency, so add water if necessary. Cook until oil separates

    In seasoning pan heat oil. Add in jeera, saunf and let it splutter. Add in cinnamon, clove, cardamom, star anise and curry leaves. Sauté well and it to paya and simmer for 2 minutes.

    Finally garnish with coriander leaves.

    Serve hot Mutton Paya with spongy Idli.
