Bottle Gourd Curry (sweet & tangy)

Heat oil in a pressure cooker. Add mustard seeds, cumin seeds, cinnamon sticks,s and curry leaves. Let them splutter and crackle.

Now add bottle gourd, asafoetida red chili powder, turmeric powder, coriander powder, salt jaggery, and lemon juice.

Pour 1/2 cup water. Mix very well.

Pressure cook bottle gourd curry for 3 whistles on medium flame.

If you find curry to be more liquid then dry it a little bit by simmering in the cooker without the lid till you get the desired consistency in the curry.

Garnish it with coriander leaves and serve hot with roti.
