Cucumber with Garlic Dressing

I tried to recreate a side dish that I ate in a Benitora gyoza dumpling restaurant.
I changed the tool for pounding from a knife to a rolling pin (users were rightly saying that it's dangerous!). I used a small rolling pin that I would normally use to roll out gyoza dumpling wrappers. Recipe by Setsubunhijiki
Cooking Instructions
- 1
Pound the cucumber with a rolling pin (as if you are trying to crack it from end to end) and break up into bite-sized pieces with your hands.
- 2
Crush the garlic with a rolling pin. Place the rolling pin on top of the garlic, press down, and chop into small pieces.
- 3
Add the cucumber to a bowl, sprinkle over some salt and give a quick toss. Leave for a while until the moisture leaks out of the cucumber pieces, tip the bowl to one side and discard the liquid.
- 4
Add the garlic to the sesame oil and mix everything together. Chill well in the fridge, then serve.

With so much rain and the mild weather we've had, my herb garden is turning into a jungle, with all the plants growing huge. Today I decided to use the mint leaves for a delicious and nutritious cucumber salad, which is very cheap and in season. If you can't find mint, you can use spearmint. This is a recipe I know is widespread and loved by many. This is just the way I was always taught to make it. The amounts of each ingredient for the "dressing" really just depend on how many cukes you have and how big they are, so I'm not listing amounts in the ingredients, but instead telling how much of each I used for this particular batch.
