I love goma dofu. When I found out it can be made with kanten, I learned how to make this.
It's also delicious with ponzu.

After removing the pot from the heat, cool it down while stirring; this will prevent lumps. It takes some extra effort, but it's worth it. Recipe by ai mama

Ingredients

  • 4 gramsPowdered kanten
  • 1 tbspWhite sesame paste
  • 450 mlSoy milk
  • 100 mlDashi stock
  • 1 tspUsukuchi soy sauce
  • 1/2 tspSalt
  • 1Wasabi

Steps

  1. 1

    Put the dashi stock in a pot and add the powdered kanten. Dissolve the kanten.

  2. 2

    Put the sesame paste in a bowl and pour in the mixture from Step 1. Mix well.

  3. 3

    Heat the soy milk in a pot and add the mixture from Step 2. Bring to a boil over low heat, stirring to prevent lumps. When it's well mixed and bubbles start to form around the edges of the pot, remove from heat.

  4. 4

    Immediately place the pot over cold water to cool and stir until thickened.

  5. 5

    After the mixture thickens, pour it into a mold and chill in the refrigerator.

  6. 6

    Cut into desired sizes and serve with wasabi.
