Water Spinach Ham and Onion Salad

I got tired of stir-fry, so I whipped this up. Grainy mustard and ham makes this so refreshing.
Don't over-boil it, or it will lose it's chewy texture. Ham has sodium, so add it at the end. 1 serving is about 86 calories. Recipe by LazyHata

Steps
- 1
Mix the ★ ingredients with a whisk and emulsify.
- 2
Thinly slice the ham and onion. If you let the onion sit for about 10 minutes after cutting, it somehow gets rid of the spiciness.
- 3
Cut the water spinach into 4 cm pieces and parboil for a minute, rinse with water, and squeeze out the excess moisture.
- 4
Toss the onions and water spinach with the ★ ingredients to coat. Finally, add the ham and lightly mix to finish.
- 5
Water spinach is full of Vitamins A, B, and C, folic acid, iron, calcium, and more, but it doesn't have a strong taste, so it goes well with almost anything.
