Fun Roasted Butternut & Beetroot Salad
My cousin Mbali is a huge fan of beetroot so I’m always looking for ways to make it fun and extra delicious.

Preheat oven to 180. Place butternut cubes onto foil lined oven tray and bake in oven for 15 minutes.

In a salad dish add the beetroot, feta and rockets
- 3
Mix the balsamic vinegar and honey in a cup. This will be the salad dressing.

Once butternut is roasted add a teaspoon of cinnamon and add the butternut to the rocket, feta and beetroot.

Pour the salad dressing over and toss to combine.
