Ingredients

1 lb. pasta
  1. 2 tbsp.Olive oil
  2. 1/2large yellow onion, finely diced
  3. 3 clovesgarlic, minced
  4. Pinchred pepper flakes (optional)
  5. 1/2 tsp.Italian seasoning
  6. 1/3 cupvodka
  7. 1 can (28 oz.)Unsalted crushed tomatoes
  8. 3/4 cupheavy cream
  9. Salt and pepper, to taste
  10. Some pasta water (from cooking your pasta)
  11. 1 tbsp.Butter
  12. 1/2 cupfreshly grated parmesan

Cooking Instructions

    Heat the oil in a large, deep skillet over medium heat. Once it's hot, add the onion and cook, stirring often, until it's softened. Then add the garlic, red pepper flakes and Italian seasoning and cook another minute or so, until fragrant. Carefully pour in the vodka and cook for 5 or so minutes, until reduced by half.

    Pour in the crushed tomatoes and the cream and let it come up to a simmer. Then let it simmer until the sauce thickens a bit. Season to taste with salt and pepper. Once it's thickened up, stir in some of the pasta water (start with about 1 or 2 ladles from the pot, but reserve some and add more if needed later). Then stir in the parmesan cheese and stir until melted.

    Mix your pasta into the sauce and if needed, stir in more pasta water. That's it!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.

I was talking to my head chef about this recipe because I wanna try it. Seems like this is a mix of Alfredo and Marinara with vodka added in (you probably already knew that, I didn't) but she told me if you add White Wine to the Alfredo it makes your sauce creamier. (You might've known that too anyway) but I learned that from this recipe so thanks! Can't wait to try it when I make it.
