Vodka-Less Sauce

My wife loves her Penne a la Vodka. One of her favorite dishes. While she was pregnant, she sadly could not order this at restaurants. Yes, a lot of alcohol does burn off, but about 20-30% stays. Why take the chance, we thought?

When her birthday rolled around, I decided to use a recipe that I had and just leave out the vodka. That way, she can still enjoy her favorite dish. She loved it so much and we still make it this way.

You can always add the Vodka. In my original recipe, it was after the onions were sauteed.

Ingredients

4-6 servings
  1. 4-8 ozPancetta, diced
  2. 1 StickUnsalted Butter
  3. 1Shallot or Small Onion, diced
  4. 2 HeadsGarlic, diced
  5. 8 OzTomato Sauce
  6. to tasteGround Black Pepper
  7. 1 tspDried Oregano
  8. 1 tspDried Basil
  9. 8 ozHeavy Whipping Cream

Steps

  1. 1

    Add pancetta to the pot, over a medium heat. Saute for about 5 minutes, then add the butter.

    Add the onions and garlic to the pot. Saute with the pancetta & butter for about 10 minutes, until the shallot is clear.

    Add the tomato sauce and the spices to the pot. Suit the spices to your liking. Cook all together for about 5 minutes.

    Add cream to the pot, but do not let it boil. Cook right up until it boils.

    This can be added to any type of pasta that you may like. Recently, I did it with ravioli and it was so good. Let cool for a minute or two, to let it thicken.

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
