Kyoto Style Okra with Mashed Tofu

When making miso soup, I always save just a small amount. I wanted to make a bonito and soy sauce flavored boiled vegetable dish, but instead I made a mashed tofu dish with okra.
Since it came out refreshing and delicious, I decided to post the recipe.
Be careful not to boil the okra for too long.
To brine the okra, sprinkle with salt, and roll them on a cutting board.
You can scrape off the fuzzy hairs if they bother you, but I didn't this time.
This is a very mildly flavored dish. Recipe by nonmam

Okra and umeboshi go well together. This chilled tofu dish is perfect to enjoy during the summer.Cut the okra while they are still raw, then blanch in boiling water. It's easier this way, and I feel that the okra stay crispy while becoming extra gooey. Just drain the boiling water in Step 3. After draining the hot water from the okra and letting them rest for a while in a sieve, they're ready when some of their gooey liquid starts to drip. For 3-4 servings. Chunky Okra & Tofu Salad Chunky Okra & Tofu Salad
I was asked to make a dish that was quick to make during the hot summer days and that would increase the appetite. The flavorful pure sesame oil use in the dressing really brings out the flavor of the other ingredients. Since this dressing goes well with various ingredients, you can use it on salad daily.Silken tofu will fall apart too easily, so I recommend using firm tofu. You can use the microwave to remove the moisture if you don't have time. In that case, wrap the tofu in a paper towel and microwave for 1-2 minutes. It will taste even better if you blanch the tomatoes to remove the skin. Recipe by Kadoya-seiyu cookpad.japan -
