Mexican Style Chilled Chinese Noodles with Salsa

The combination of bell peppers and avocado is a topping for chilled Chinese noodles that you won't want to miss. The juice that comes from microwaving the peppers is so delicious, so don't throw it away. Add it to the soup.

  1. Chilled Chinese Noodles:

  3. 1Avocado
  4. 1/2Red bell pepper
  5. 1/2Yellow bell pepper
  6. Salsa-style Soup:
  7. 1/2Tomato
  8. 1/4Onion
  9. 1Coriander (or parsley, mitsuba, mizuna etc.)
  10. 2 cloveGrated garlic
  11. 1Lemon
  12. 1 tbspConsommé soup stock granules
  13. 1 tspMagic Salt
  14. 1Coarsely ground black pepper
  15. 1/2 tspSalt
  16. 1 tbspTomato ketchup
  17. 1 tbspHoney (or sugar)
  18. 2 tspTabasco
  19. 3 tbspBoiling water
  20. 150 mlMineral water (or regular water)
  21. 1/2 tbspAvocado oil (or vegetable oil)

Steps

  1. 1

    [Salsa Sauce] Dissolve the consomme granules in hot water.

    Add the grated garlic, Magic Salt, black pepper, ketchup, honey, Tabasco, and water. Mix well.

    Mince the tomato, onion, and coriander. Cut 2 slices from the lemon and then squeeze the remainder to get 2-3 tablespoons of lemon juice.

    Add the chopped vegetables and the lemon juice to the liquid ingredients. Season with salt. Drizzle in the avocado oil and place in the refrigerator to chill.

    Boil the Chinese noodles and top with the sliced avocado and peppers.
