I adore Rum Chata (especially in coffee). I was making a tres leches cake and added some Rum Chata to the milk combination. I was going to go with making a buttercream frosting but figured why not make a lighter topping for the cake. Good for anyone who likes the liquor. I put the left overs on some strawberries and ate it right off of the spoon, it's that good.

So easy my 10 year old niece actually made these. Double the recipe for more than 2 people

This is a very stable whipped cream based frosting and filling. The white chocolate and cream cheese keeps it firm but very light and fluffy.
