Parsley and egg roll pancakes

Parsley has many health benefits like reduce bloating, balance blood sugar level plus lots of vitamins and help boost immunity.
It's rarely use in dessert, so today I will give it a go. I use egg layer to balance the taste and they look pretty when rolled up.

It's rarely use in dessert, so today I will give it a go. I use egg layer to balance the taste and they look pretty when rolled up.

Mix parsley, egg and milk, blend until smooth.

Add flour then sugar

Now make a yellow one with egg, milk, sugar and flour. Beat them until smooth.

Use low heat, brush pan with thin layer of oil, add 3 spoons of the good stuff. Tilt the pan so they spread. Once the colour changed like in photo, they are cooked and move it to plate. I use 2 layers only, you can add more if you want a bigger rolls.

Roll them up tightly and carefully

Cut them about 1cm thick and plate them to however you like. Here are mine. Which display do you like the best?
