Ingredients

Serves 4 servings
  1. 2 cupssemolina (about 250 grams)
  2. 1/2 cupdried chickpeas (about 100 grams)
  3. 1/2 cupplain yogurt (about 100 grams)
  4. Salt to taste
  5. 1 tablespoonred chili powder
  6. 2onions
  7. 2tomatoes
  8. 2green chilies
  9. 1 tablespoonginger paste
  10. 1 tablespoongarlic paste
  11. 1/2 teaspoonturmeric powder
  12. 1 tablespooncoriander powder
  13. 3/4 cupoil (about 200 grams)
  14. Chopped cilantro as needed, for garnish
  15. 1 tablespoonchole masala
  16. 4-5curry leaves
  17. 1bay leaf
  18. 1/4 teaspooncumin seeds
  19. 1 pinchasafoetida

    Soak the chickpeas overnight. Boil them in a pressure cooker for 4-5 whistles until soft.

    Add the semolina to a bowl. Mix in 1 tablespoon oil, salt to taste, and yogurt to make a stiff dough. Cover and let it rest for 2-3 hours.

    First, blend the onions, tomatoes, and green chilies into a paste. Heat oil in a pan, then add cumin seeds, asafoetida, bay leaf, and curry leaves. Next, add the garlic and ginger paste. After 30 seconds, add the onion paste, then after another minute, add the tomato paste.

    Cook for 2 minutes, then mash well.

    Cover and cook for 10-15 minutes. Add 2 tablespoons yogurt and chole masala. Garnish with cilantro.

    For the bhature, heat oil in a deep pan. Roll out 1-2 bhature and fry them in the hot oil until golden brown.

    Serve hot.
