Fry leek with oil till soft.

Add garlic and ginger if using. Stir not to burn.

Add all other ingredients apart from stock. Stir and cover for like five min on med heat.

Add the stock and bring to boil till all veggies are cooked and tender to blend.

Blend it when abit cool and be careful with the steam.
- 6
You can add some milk if you wish but if you need iron, avoid adding milk as the calcium in milk renders the iron in spinach useless during absorption.
