I edited a recipe I previously uploaded, "Refreshing with vinegar! Energy-giving stir fried pork"by changing the ratio of flavoring ingredients and simplified it.

Even cheap meat becomes very tender by rubbing sake, sugar and salt (see "How to prep meat salted chicken style") and coating with katakuriko potato starch flour.
If you eat the side vegetables with the pork, you can eat up a ton of veggies. Recipe by Hokkori-no

Ingredients

4 servings
  • 400 gramsThinly sliced pork (loin coarsley chopped offcuts, etc)
  • 1 tbsp・Sake
  • 1 tsp・Sugar
  • 1/4 tsp・Salt
  • 2 tbspKatakuriko
  • 1Vegetable oil
  • 1as much (to taste) Lettuce, cabbage etc.
  • Combined flavoring ingredients:
  • 1 tbspMentsuyu (3x concentrate)
  • 1/2 tspSoy sauce
  • 1 tbspSugar
  • 1 tbspSake
  • 1 tbspVinegar
  • 1 tbspWater
  • 1/2 tspGrated ginger
  • 1/8 tspGrated garlic

Steps

  1. 1

    Combine the flavoring ingredients.

    Cut the pork into easy to eat pieces and put in a bowl. Add sake, sugar and salt, work it well with your hands, and leave for a while. (This is to tenderize the meat.)

    Add katakuriko to the pork and mix.

  4. 4

    Put vegetable oil in a heated pan, and stir fry the pork while separating the pieces.

  5. 5

    When the pork is cooked, add the combined flavoring ingredients from step 1 and mix well. When the sauce has thickened, turn off the heat.

    Arrange on a serving plate with shredded lettuce or cabbage.
