I based this off one of my cheesecake recipes.

The batter may splatter in Step 1, so loosely cover with plastic wrap.
Adjust the baking time to suit your oven and the size of the cupcakes.

Cream Cheese Cupcakes

Ingredients

6 servings
  1. 100 gramsCream cheese
  2. 10 gramsButter
  3. 30 gramsPancake mix
  4. 1Egg
  5. 3 tbspSugar
  6. 1 tbspMilk
  7. 1/2 tspLemon juice

Cooking Instructions

    Put the cream cheese and butter in a heatproof container. Microwave at 600 W for about 40 seconds to soften.

    Mix with a whisk until it reaches a cream-like consistency. Preheat the oven to 180°C.

    Add rest of the ingredients to the cream cheese mixture and mix well.

    Lightly grease the cupcake pan with vegetable oil (not listed). Pour in the batter.

    Bake in preheated oven for about 18 minutes.
