Orange and Cream Cheese Cupcakes

I came up with this recipes when I was thinking of cakes using orange peel and cream cheese.

In Step 4, it's important to whip the eggs and sugar well.
I use moist and thinly cut orange peel. If the orange peel is too big, cut it thinly. You could also use drained marmalade. Recipe by Chobikoro

Ingredients

6 servings
  1. 120 grams●Cake flour
  2. 1 tsp●Baking powder
  3. 10 grams●Cocoa powder
  4. 1Egg
  5. 60 gramsGranulated sugar
  6. 40 grams■Butter (unsalted)
  7. 60 ml■Milk
  8. For the filling:
  9. 80 gramsKraft Philadelphia Cream Cheese
  10. 40 gramsCandied orange peel

Cooking Instructions

    Sift together the ● ingredients. Bring the eggs to room temperature. Heat the oven to 180℃.

    Briefly microwave the cream cheese to soften. Mix in the orange peel.

  3. 3

    Combine the ■ butter and milk. Microwave for about 40 seconds to melt the butter. Microwave for longer if necessary.

    In a separate bowl, beat the eggs and add the sugar. Use a hand mixer to whip until pale and thick.

    Gradually stir the melted butter into the egg mixture a little at a time.

    Fold in the sifted ingredients with a rubber spatula. The batter is complete.

    Fill 6 muffin cups a little less than halfway. Spoon in balls of the filling from Step 2.

    Pour the remaining batter on top. Bake for 25 minutes at 180℃.
