Dalgona Candy / Honeycomb Candy

This is actually a honeycomb candy made with sugar and baking soda. It is sold on Korean streets since many years and eaten as a retro food but it has come to everyone's notice due to the Netflix show 'Squid Game'. It is even called ppopgi candy.
This is a brittle candy with sponge like texture. It really taste good because of its texture and flavour.

Take 1 tbsp sugar in a small pan / tadka pan and let it heat on a low flame. Keep stirring using a wooden stick while it melts. When it melts completely, turn off the heat and remove pan from the burner. You have to be very careful as even a few seconds more on heat might spoil the colour, taste and texture of the candy.

Add 1/8 tsp or a pinch of baking soda and mix it well. It will change colour and will look like foam. It will be light and fluffy in texture. Now pour the mixture on a greased baking paper and make a mark, if you want to, with the greased cookie cutter or a mould. Leave it until almost cold and remove the mould carefully without breaking the candy.

Prepare all the candies in the same way. For each candy you have to wash the pan and start it again.
