Whisk dry ingredients: flour, baking powder and salt

In a separate bowl, beat softened butter and sugar until it thickens

Add egg one at a time and whisk it, then add ube extract

Add flour and buttermilk slowly

Pour batter in 12 muffin lined tins, filling only 2/3 full per cup.

Bake 350F for 20mins. When done, let cool for 5mins.

For frosting, whisk heavy whipping cream until it thickens, set aside.

In a separate bowl, whisk together cream cheese and powdered sugar, slowly then medium to high speed

Mix together the whipped cream, cream cheese mixture and ube extract

Put frosting in pastry bag, and pipe it baby, sprinkle with ube cupcake bits
