Spinach and mayonnaise goes well with eggs. I created this dish with the intent to combine them in a pretty nest arrangement.

The spinach will be cooked during steaming, so it's best to shape it and add the egg quickly. When transferring it to the serving dish, be careful not to break the egg. Recipe by Tanshin funin no ryourinin

Chop the spinach lengthwise into thirds.

Heat vegetable oil (not listed in ingredients) in a frying pan and add the spinach to the pan.

Once the spinach becomes tender, mix in the salt, pepper, and mayonnaise, then arrange the spinach in a circle, with an indentation in the center.

Break the egg into the indentation, cover with a lid, and steam on medium heat.

Once the egg white turns cloudy, remove from the heat and slide the entire nest off of the frying pan onto a serving dish.
