Rich Cream Penne with Soy Milk & Pre-Cut Cheese

I wanted to eat gorgonzola penne, but it's not a type of cheese I normally have in my fridge.
So, I wouldn't say it's just like "penne alla gorgonzola”, but I made this using mayonnaise, my secret ingredient. It always works when I need something to add to a dish.

Even if the cheese hasn't melted completely, it will melt very quickly when you add the boiled penne. So don't worry! Recipe by Ha-tannookkasan

Ingredients

2 servings
  1. 100 gramsPenne pasta
  2. 9 tbspSoy milk
  3. 4Pre-cut baby cheese (with Camembert cheese)
  4. 1 tbspMayonnaise
  5. 1/4 tspeach Salt and pepper
  6. 1Black pepper

Cooking Instructions

    Start cooking the penne for 9 minutes. You can start Step 2 when half of the cooking time has past.

    Pour the soy milk into a saucepan. Break up the baby cheese and add to the pan, and slowly melt it over low heat.

  3. 3

    When the penne has boiled, add to the saucepan. Add the mayonnaise, salt and pepper, mix together quickly over medium heat to thicken the sauce. Then it's done.

    Serve on a plate, sprinkle with black pepper to finish.
