Fill a saucepan with water and bring it to a boil to cook the eggs. Add a pinch of salt and 1 tablespoon of vinegar; this helps the egg whites set quickly if any eggs crack while boiling.

Once the water is boiling, add the eggs and cook for 10 minutes. When done, remove the eggs from the saucepan and let them cool.

In a pot, bring water with a little salt to a boil. While the water heats, clean, wash, and drain the green beans. Trim the ends and cut them into strips about 1 1/2 inches (3–4 cm) long. Add the green beans to the boiling water.

Add the potatoes (peeled and washed) to the pot and boil everything for about 30 minutes.

When ready to serve, drizzle with olive oil and, if you like, a splash of vinegar. Top with the hard-boiled eggs, chopped into pieces.
