Let's start with the vegan mayonnaise. Add all the vegan mayo ingredients into a hand mixer’s jar and pulse blend till white, creamy and fluffy. (Recipe attached to the ingredients)

Next step to assemble the remoulade sauce. When the mayonnaise is quite thick, flavored with mustard, lemon juice, salt, pepper and powdered sugar. As soon as the mayonnaise base has been completed, you can come to all other ingredients: Vegan soured cream, finely chopped shallots, spring onion and garlic, chopped chilli gherkins and freshly shredded dill, parsley and chives.

As soon the Remoulade is done, assembling the sandwich can come: Toast the bread slices both sides in a frying pan or toaster and then rubbing the slices thinly with garlic cloves. Spread some hummus on the toasts and add the vegan bacon slices and quick fried egg, richly sprinkling with some mixed leaf greens. Top all these with a couple of spoons of the remoulade sauce. We will consume immediately!
