Chicken soup - pressure cooker

This is the ultimate comfort food for a rainy day or if you feel under the weather. I always use the pressure cooker when I make chicken soup as it is much quicker and all the flavours stay “locked in”. Hope you try it out, it is so yum!

This is the ultimate comfort food for a rainy day or if you feel under the weather. I always use the pressure cooker when I make chicken soup as it is much quicker and all the flavours stay “locked in”. Hope you try it out, it is so yum!

Prepare your products and wash well, carrots and chicken.

Cut chicken in 4 pieces and place inside the pressure cooker. Cut carrots and garlic and keep aside in a bowl.

Add in the pressure cooker: thyme, salt, pepper, oregano and rosemary, and cover with water. Turn on medium heat and close well the pressure cooker so it clicks. Cook on medium heat for 30 min. Turn heat off. Once time is finished you will have to release the pressure slowly from the pressure cooker.

Now that chicken is ready, take it out, and keep it in a bowl that is covered in cling wrap. This will keep the moisture in.

Turn heat on again, leave the broth liquid in and add carrots, garlic, rice, more herbs, and lemon juice. Close the pressure cooker and cook for 20 min.

Shred the chicken. Remove bones.

Once you have released the pressure after cooking veggies and rice in broth, turn heat on low, and add shredded chicken. Now add more salt and lemon juice according to your taste.
