Chicken Alfredo (quick and simple)

This is a very quick, filling and easy meal that feeds a lot of people. I've been making this for a few years for my family, they always enjoy it. I have a white board in my kitchen with a section for them to request what meals they would like and this is one of their favorites to ask for. I realized I didn't have any bread sticks while I was making this so I made these simple garlic bread sticks with regular sandwich bread last minute. I will upload that recipe next.
Chicken Alfredo (quick and simple)
This is a very quick, filling and easy meal that feeds a lot of people. I've been making this for a few years for my family, they always enjoy it. Cooking Instructions

Remove excess fat from thighs. Wash and pat dry thoroughly with paper towels. Season each side liberally with 1 tsp of the salt and 1 tsp of the pepper

Heat large Dutch oven or skillet, add 2 tsp oil, when oil is hot add seasoned chicken.

On medium high add chicken and use remaining oil to drizzle on top of chicken (cook about 7 minutes per side).

Add your water. Cover and simmer 30 minutes, turning meat once.

Remove chicken and place on aluminum foil, wrap completely in foil and let sit while you finish making sauce.

Raise heat and allow remaining water to cook down, stirring often with a whisk.

When water is reduced and juices have thickened add cream, cream cheese, Italian seasoning, butter and remaining salt and pepper and stir continuously with whisk on medium low heat until everything is well incorporated. Reduce heat to low simmer, cover and let cook for 10 minutes.

Chop chicken and add to sauce. Then add parmesan cheese cook on low heat. You know it is done when parmesan is no longer stringy and sauce is smooth and thick (coats the back of a spoon).

Cook fettuccine according to package directions.
Tip: If your Alfredo sauce thickens more than to your liking you can add some of your pasta water at the very end to thin it out.

As soon as pasta is done plate it and add your Alfredo sauce. Top with extra parmesan and parsley (optional)
