A winter delicacy which is not only scrumptious but also healthy.
Steps

Peel the carrots and grate them.

Take a large round bottom vessel and add grated carrots.

Add the milk to the carrots (milk should be double the quantity of carrots… for 1kg of Carrots add 2 litres of milk).

Let them cook well stirring occasionally on low flame.

Boiling carrots in milk gives it a beautiful colour and creamy texture.

Add sugar when most of the milk is dried up. Keep stirring so as to avoid it sticking to the base.

Add fresh cream slowly while stirring continuously in intervals.

Add the desi ghee to the halwa and let it absorb on low flame…. Ghee can be added as and when required….

Chop the dry fruits and add to the halwa once it is in final stages of roasting.

Serve hot …. Sprinkle some chopped dry fruits over. Desiccated coconut can be sprinkled with the help of tea strainer…. It imparts flavour.
