Ingredients

  • For warm tomato salsa
  • 2teaspoon oil
  • 1/2cup sliced onion
  • 1/2cup sliced green pepper (non spicy)
  • 2tsp minced garlic
  • 1cup tomato chunk
  • 1/2tsp dried oregano
  • 1bay leaf
  • 1/2cup canned tomato sauce
  • 1/2cup each red and green pepper cut into chunks
  • 2chipotle pepper
  • salt n pepper to season
  • 2tsp freshly chopped cilantro
  • For refried beans
  • 1.5cup boiled pinto beans (canned pinto beans will do too)
  • 1/4cup diced onion
  • 1/4teaspoon each cumin and coriander powder
  • Knob of butter
  • salt n pepper to season
  • For fresh guacamole
  • 1avocado
  • 2tsp lime juice
  • 1tsp diced red onion
  • 2tsp diced deseeded jalapeno
  • 1/4tsp cumin powder
  • 1/4tsp cayenne
  • 1tsp freshly chopped cilantro
  • Salt and pepper to season
  • For fresh tomato salsa
  • 1/2cup roughly chopped tomato
  • 1tsp diced deseeded jalapeno
  • 1.5tsp diced red onion
  • 1tsp lime juice
  • 1garlic clove chopped
  • 2corn tortillas
  • 2eggs

    Step 1- lets make a warm tomato salsa or sauce
    Heat 2 teaspoon oil on med hi heat
    Add ½ cup sliced onion and saute for few minutes
    Add ½ cup sliced green pepper, whatever non spicy green pepper you have on hand will do.
    And saute for few mins.

    Then add 2 teaspoon minced garlic and cook till fragrant
    Add 1 cup tomato chunks and cook for few minutes
    Add ½ teaspoon dried oregano and cook for a minute
    Add ½ cup canned tomato sauce and cook for couple minutes
    Add water as needed, we don’t want it too watery,
    It will be a thick tomato base
    Add 1 bay leaf and cook for 2 minutes

    Add ½ cup each red pepper and green pepper cut into chunks
    I added 2 chipotle peppers for some heat.
    Add water as needed
    Cover and cook for 10 minutes on med heat, stir time to time
    Season with some salt and pepper
    Add a handful freshly chopped cilantro
    Remove the tomato salsa in a bowl and let it cool. Separate the bay leaf

    Step 2- Making refried beans- which actually means cooking the beans twice
    In the same pan add 2 teaspoon cooking oil on med heat.
    Add ¼ cup diced onions and saute for a minute
    Add 1 and half cup cooked pinto beans. I used canned pinto beans.
    Add ¼ cup water.
    Add ¼ teaspoon cumin powder, and ¼ teaspoon coriander powder and cook for 5 minutes.
    Then using a masher, mash the beans till they are kind pasty

    So what is refried beans or twice cooked beans- its boiling the beans first and then cooking it again..in simple terms. Beans can be soaked and boiled separately from scratch, In my case the canned beans served the purpose of boiled beans.
    Add a knob of butter to the mashed beans, season with salt and pepper and remove

    Step 3- making fresh guacamole
    Cut the avocado in half, then slice them horizontally and vertically, it will create small chunks. Scoop the avocado in a bowl.
    Squeeze some lime juice about 2 teaspoon
    Add 1 teaspoon diced red onion, 2 teaspoon deseeded diced jalapenos, ¼ teaspoon cumin powder
    1 teaspoon chopped cilantro, season with salt and pepper
    And ¼ teaspoon cayenne for some heat
    Mix well till smooth

    Step 4- making fresh tomato salsa
    In food processor, add ½ cup roughly chopped tomato
    1 teaspoon deseeded diced jalapeno, 1 and half teaspoon diced red onion
    1 teaspoon lime juice
    1 clove garlic chopped
    Blitz few times and that’s it, salsa is ready

    Step 5 -Finishing the warm tomato salsa
    Put the cooked tomato salsa in a blender and blend till smooth

    Step 6 – Making tostadas, fried corn tortillas
    On med hi heat, add ¼ teaspoon oil. Add the corn tortillas, shallow till cripy, about 2 to 3 minutes per side

    Step 7- frying the eggs
    In the same pan crack an egg and fry them till your liking on med heat. I cooked mine for 2 minutes

    Step 8- Now lets put everything together.
    First We will put a layer of fried mashed beans on the tostadas, then a layer of the warm tomato salsa
    Then put the eggs on top
    Some fresh guacamole and salsa on the side.

    And there you go…huevos rancheros.

It gives me an opportunity to nurture my family and friends, express my love and care for them.
