Salsa Verde (Green Salsa)

I found some mysterious looking tomatillos in the supermarket and used them to make this green salsa. I prefer green salsa over red salsa and tried many ways to get this recipe right. I tend to buy my salsa but wanted to taste some homemade stuff just this once.

Of course you can use jalapeño peppers rather than Serrano chili peppers if you'd prefer. You can also make this salsa entirely with raw vegetables. I always boil my vegetables but there's not really a reason for it, it's just something that I have always done. You can also make a warm simmered sauce from this recipe by adding more salt. Ingredients

  1. 1 lbTomatillos
  2. 3/4Onion (medium)
  3. 1Cilantro
  4. 3Scallions
  5. 3Serrano chili peppers
  6. 1/4 tspSalt

Cooking Instructions

    This is a tomatillo. I used ones with large fruit in the middle.

    Peel the tomatillos and wash them well.

  3. 3

    Quarter half of the onion and finely chop another quarter. Mince the cilantro and finely chop the scallions.

    The peppers on the left are Serrano chili peppers. They're much longer and thinner than the jalapeño on the right and have a milder flavour.

    Slice the Serrano chili peppers in half vertically and use a spoon or knife to get rid of the seeds.

    Boil some water with a pinch of salt in a saucepan and add the onion (the quartered half), tomatillos, and cilantro in that order.

    When the water comes to a boil once again, stop the heat and drain the vegetables. Add the vegetables to a food processor and blend them until smooth.

    Transfer the mixture to a bowl and mix in the finely chopped onion, scallions, cilantro, and salt.

    Chill the salsa in the refrigerator and serve with chips.
