Eggplant (Aubergine) Stew 🍲

Heat oil in a pan. Sauté onions and garlic until fragrant, tender and almost browned. Add carrots and green pepper and stir a few times to just slightly incorporate but not soften them

Add tomatoes, seasoning and cook it down a little to a sauce consistency/taste

Add eggplants and stir. Followed by adding water, a little at a time. You will not need a lot of water as the eggplants will soon start to release their own water

Reduce heat to medium-high, cover pan and keep a watchful eye while stirring frequently. P.S.:- do not stir vigorously to avoid mashing the eggplants, stir just enough to lift the bottom eggplants and prevent sticking

Cook to desired doneness and enjoy with rice or nsima/sadza
