It’s Basant Panchami and yellow is the colour of Spring. What better way to observe but to have the famous Maharashtrian dish of Dadpe Pohe, a favourite of mine
Steps

Wash the Pohe and put in a bowl, add grated coconut, chopped onions, chopped coriander leaves and lime juice, mix well and cover for 30 mins

In a wok heat oil, add mustard seeds, let it splutter, add cumin seeds, let’s it splutter, add peanuts and stir for 2-3 mins on low flame

Add chopped green chilies, turmeric powder, salt and mix well. Set aside

Mix it with Pohe until well combined
- 5
Plate to serve
