Steps

Cut all veggies and wash properly. Heat oil in heavy bottom pan.

Add heeng, shahi jeera and turmeric powder. Add carrots first and season the carrots and cover for 3-4 minutes.

After that add peas and methi leaves. Add dry coriander powder, mix well and cover for 6-7 minutes. Add some water if you need.

After that add amchur powder and check the seasoning. Super tasty and perfect for winter your gajar matar methi sabzi is ready. Enjoy this with hot roti or paratha.

Note -
When we have leftover of this dish, I often combine it with rice and add soy sauce. Delicious fried rice is ready!! Trust me it tastes so good and there will be no leftover.
