First of all take the roasted almonds and break them into tiny pieces as shown in the image below.

Now take a pan, add sugar in it. Keep the flame at the lowest, we need to caramelize the sugar. After sometime you will notice that the sugar has started melting. It will take around 15 minutes to caramelize the sugar completely.

Once the sugar gets caramelized, switch off the flame & add the butter and coffee essence in it and quickly start mixing it.

Now pour this caramel over a greased plate or over the kitchen slab as I did. It should be thinly spread. Now let it harden or let it come to the room temperature. Until it hardens, melt the chocolate by using double-boiler method as shown.

Now pour the melted chocolate over it and spread it evenly over the caramel slab. The chocolate colour is different from dark chocolate as I have used a mixture of dark, milk and white chocolate compound but to get a perfect texture use only dark chocolate compound.

Now sprinkle or coat the slab with chopped roasted almonds just as shown below. Coat it with as much almonds as possible. Now keep this inside the freezer for about 5 mins. Then remove it and coat the second side of it in the same way. Again keep it in the freezer for 5 mins.

Now break the bar into small pieces. It would look good if you could give it a shape just like a chikki bar. Your Almond Brittle is now ready. It just tastes yumm with a suttle taste of coffee and butter in it. And believe me, after making this at home you will never purchase Almond Brittle from outside shop/online.
