Oven baked Salmon with mom’s handpicked sumac

I have many ingredients in my cupboard from my mom, and the sumac is the last that comes to my mind when I cook! That’s a shame because it’s handpicked from the village and dried by mom (along with the zaatar of course!) and it deserves to be treated better, so I’m adding it on my salmon 🤗
Sumac in general is very underrated yet it’s sooo full of flavours. It’s sour, citrusy, tangy yet fruity and goes perfectly with fish.

Pregeat the oven to 200C.
Mix the teaspoon of sumac with a drizzle of olive oil to form a paste (not too thick but spreadable). Add the crushed garlic and mix. - 2
Line the vegetables your using along with the salmon on a baking sheet. Using a brush spread the mixture of sumac, oilive oil and garlic. Sprinkle some salt

Cook in the oven for 20 minutes. Then for another 2-3 minutes under the grill. The leek was surprisingly soooo soft and tasted sooo sooo good
