This recipe, also known as Brinjal gravy, is one of my favorites. I started liking brinjal because of this recipe. It's served with rice or as a side dish with Biryani.

This recipe, also known as Brinjal gravy, is one of my favorites. I started liking brinjal because of this recipe. It's served with rice or as a side dish with Biryani.

To fry Brinjal, make an X in the bottom of the brinjal and then add the masala paste to enhance the Brinjal flavour. Mix in 1/2 tbsp red chilli powder, 1/2 tbsp coriander powder, and salt with a little water to make a paste. Then stuff the Brinjal with the paste. After that, heat a pan over medium heat and fry the brinjals for 7-8 minutes.

Heat the oil in a Kadai, then add the mustard seeds, curry leaves, and garlic and sauté for a minute. Then add finely chopped onions and sauté until translucent.

After that, add chopped tomatoes and cook them till it becomes a paste. Then, add fried Brinjals and saute for a minute.

Add turmeric powder, red chili powder, coriander powder, cumin, fennel seed powder, and salt to taste. Mix well then add the tamarind juice. Pour in the necessary water for the gravy.

After that, close the Kadai and let it cook for 5-7 minutes.

Taste and see if salt and spicy is proper. If needed, kindly add.
