I made this burger Inspired by a very popular street food in Bangladesh, Chicken Chaap.
Chicken chaap is boneless pieces of chicken marinated in a spicy yoghurt based marinade, then shallow fried, served with parathas and salad. I tweaked a little bit and made these into burgers, which turned out excellent.

Ingredients

overnight marination. 20 mins to cook and serve
6 servings
  • 3chicken breast
  • 6burger buns (i used pretzel buns)
  • 2heaped tsp fried onion
  • 3heaped tsp yoghurt
  • 2 tspDijon mustard
  • 1 tspchilli powder
  • 1/2 tspturmeric
  • 3/4 tspgaram masala
  • 3/4 tspcoriander powder
  • 3/4 tspcumin powder
  • 1/4 tspmace powder
  • 1/4 tspnutmeg powder
  • 1 tspgarlic and ginger powder each
  • 3 tsplemon juice
  • Salt for seasoning
  • 2 cupchickpea flour
  • Tamarind Mayo
  • 2 tspmayo
  • 2 tsptamarind sauce
  • Some melted butter for toasting the buns
  • Choice of veggie for toppings- I used cucumber, lettuce and onion
  • Enough oil for shallow frying (2-3 cup)
  • Blender required

Steps

overnight marination. 20 mins to cook and serve

    Step 1 – Put 2 heaped tsp fried onion and 3 heaped tsp yoghurt in a blender and blitz. Pour the mix in a bowl and add 2 tsp dijon mustard, 1 tsp chilli powder, ½ tsp turmeric, ¾ tsp garam masala, ¾ tsp coriander powder, ¾ tsp cumin powder, ¼ tsp mace powder, ¼ tsp nutmeg powder, 1 tsp garlic ginger paste each, 3 tsp lemon juice, salt tastewise and mix. Let the marinade settle

    Step 2- cut the narrow part of the breast away, save it for something else. Cut the thick part in half horizontally. Marinate the chicken breast for in the marinade for a minimum of 2 hrs or overnight.

    Step 3 – making tamarind mayo- add 2 tsp mayo, 2 tsp tamarind sauce and mix.

    Step 4- In a shallow container, pour 2 cups chickpea flour. season with salt. Coat the marinated chicken pieces nicely.

    Step 5- shallow fry them in batches on med heat 3 to 4 minutes per side. Baste time to time.

    Step 6-Put some melted butter on the buns and toast on lo medium heat till they are golden

    Step 7- Assemble the burgers to your liking with your fav toppings and sauce and enjoy !!

I love cooking because its fun. It’s a way to express myself. Its an universal language which everyone understands. Cooking is an art where a doodle can be delicious. Cooking doesn’t have to be hard. It should be a mix of tradition, convenience and mostly indulgence. And it also should be about what works for you. Its all about experiencing the flavors of the world and enjoying it. It’s a continuous learning process which is never ending but its fun and fulfilling. Cooking is food for my soul. It gives me an opportunity to nurture my family and friends, express my love and care for them.
