My jollof rice is average compare to party jollof rice,but my turmeric jollof couscous is definitely on par or more 😉
Steps

In a bowl, pour in your couscous, sprinkle some salt and stir. Add in margarine or vegetable oil and stir until everything is mixed properly

Boil one cup of water and add to the couscous mixture,until it's floating on the top. Cover with a thin film or plastic cover to be airtight and keep aside.

In a deep bowl frying pan, add 2 tbspn of oil, saute onions, follow by carrots, green beans, tomatoes,pepper.keep stirring till all are soft.

Bring your couscous mixture, open it, using fork, separate the couscous from how it molds to the bowl.

While stirring your vegetables mixture,add in couscous,and mix everything together.at this point add in your spices and star ingredients turmeric and paprika powder.

Sprinkle some water,add in some onions rings, chopped mint leaves keep stirring on low heat and then cover to simmer for a minute. Off the heat serve and enjoy
