Thalipeeth from Leftover Pithala or besan curry

In the makeover of leftover Pithala which is a staple maharashtrian curry dish eaten with bhakri ( sorghum millet bread), I have made Thalipeeth from it and it tastes so delicious!
Thalipeeth is an all time teatime snack cum breakfast favourite recipe of Maharashtra and now famous everywhere. Made as a savoury skillet pressed bread cum pancake with whole wheat flour, besan( gram flour) , onions, spices and eaten with curd, pickle and a dollop of butter! It tastes so very delicious. First, keep the skillet(preferred greased cast iron or non-stick material) or tawa to heat on very low flame. Then take a bowl and mix all the flours.

Then add chopped veggies, (you can add grated carrots, cucumber, beetroot also for added nutrition) curd, seeds and spices.

Mix all together till the soft and flowy kind of dough forms which will make it easy to place and press well on the skillet.

Then take a large round of dough and pless on centre of tawa. Press it well with wet hands to form a thick flat leave circle.

Make small holes in centre and four in the sides. Pour oil in each hole. Cover and cook on medium heat till base side is crisp and golden.

Flip it over and cook on the other side by pouring 1 tsp oil in the holes. When both sides are crisp and golden and aromatic, remove in serving plate.

Serve hot with spiced yoghurt, pickle and a dollop of butter! Enjoy delicious and very healthy leftover Pithala ka makeover into Thalipeeth in your teatime snacks
