Cabbage Rolls with Sausage and Vegetables
A very tasty dish that can be prepared in countless ways. I offer you this delicious recipe with a filling made of sausage, vegetables, and Parmigiano Reggiano.
Cooking Instructions
- 1
Score the sausage and remove the casing, then crumble it and set aside.
- 2
Clean the onion and slice it, then clean the carrot and dice it.
- 3
In a pan with a drizzle of oil, sauté the onion and carrot over low heat for a few minutes, then add the sausage. Sauté, add a splash of white wine, and cook for about 10 minutes.
- 4
When the white ragù is ready, transfer it to a bowl and add the boiled and mashed potatoes, Parmigiano, salt, pepper, and season with thyme.
- 5
Take 8 large cabbage leaves, making sure to use the lighter ones, then rinse and boil them in salted water for 5 minutes.
- 6
Drain them and immerse them in a bowl of cold water to stop the cooking. Then dry them. Remove the tougher end of the leaf. Fill the center of the cabbage leaves with 2-3 tablespoons of filling.
- 7
Fold the two sides of the leaf inward and then roll from the bottom up to form the roll. Repeat with all the leaves.
- 8
Butter a baking dish and arrange the cabbage rolls. Sprinkle with Parmigiano and a drizzle of oil.
- 9
Bake at 350°F for 20 minutes and use the grill function for the last 5 minutes.

I've never made cabbage rolls before. In fact, I'm not sure I've ever eaten cabbage rolls before. But the wife asked for them, and since I'm not the type to pass up a cooking challenge, I gave it a try. She said they were good, and I liked them too, so I'll count this as a success.
