This is a popular snack made with tapioca pearls (sabudana), potatoes, and peanuts. It’s crispy and flavorful. You can serve it as a snack not just during fasting days, but anytime. Everyone enjoys it.

First, rinse the tapioca pearls thoroughly and soak them in water for 3 hours until they are fully puffed.

Drain the soaked tapioca pearls in a strainer and let all the water dry out. Meanwhile, peel the boiled potatoes and mash them well.

Coarsely crush the roasted, peeled peanuts. Mix the crushed peanuts with green chilies, ginger, and cilantro. Add the chopped cilantro, green chilies, cumin seeds, and peanuts to the mashed potatoes.

Now add the tapioca pearls and mashed potatoes, then mix in the salt.

Mix everything together and shape the mixture into round patties.

Heat oil in a deep pan. Fry the sabudana vadas on medium heat until golden brown. Test-fry one or two vadas first. If they don’t break apart in the oil, you can fry several at once.

Serve the hot sabudana vadas on a serving dish. Enjoy with cilantro chutney.
