Ingredients

  • 75grams/ 1/3 cup Extra Virgin Olive Oil
  • 100g/ 1/2 cup brown sugar
  • 50g/ 1/4 cup granulated sugar
  • 1egg
  • 1 tspvanilla
  • 1/2 tspkosher salt
  • 30 g/ 1/4 cup dutch process cocoa powder
  • 75 grams/ 2/3 cups all purpose flour
  • 45 g/ 1/4 cup + 2 tablespoons rye flour
  • 1/4 tspbaking soda
  • 150 gchopped milk chocolate

Steps

    Sift together the dry ingredients.

  2. 2

    In a separate bowl, beat the sugars with the oil. Add the egg, vanilla, and beat to combine.

  3. 3

    Combine the wet and dry ingredients, and fold in the chocolate chunks. Roll the dough into 1.5 tablespoon balls and chill for a few hours or overnight.

  4. 4

    Preheat the oven to 165 celsius. Bake the cookies for 11 minutes. Top with sea salt.
