Just like last year, I am celebrating Easter this year alone. I’ve been craving cake all week and thought I’d make myself a hearty homey carrot cake 😊 regardless of the fact that I’ve to down it myself for days 😂. What matters is what I crave now, in the moment

250 gall purpose flour (sifted)
1 tspcinnamon
1/2 tspnutmeg
Pinchsalt
1 tspbicarbonate soda
2 tspbaking powder
4large eggs
1 cupvegetable oil
1 cupbrown sugar (or less)
1 tspvanilla extract
1 1/2 cupgrated carrots
1 1/2 cupchopped apples

45 minutes

Preheat oven to 160C and line 2 6” round cake tins. Set aside

Combine and soft together all dry ingredients. Set aside

Whisk together eggs, oil, sugar and vanilla until we’ll combined with the sugar mostly dissolved

Add flour mixture to the wet mixture and mix just until combined

Stir in the carrots and apples until incorporated

Bake for 45 minutes or until a toothpick comes out clean.

Enjoy as is or frosted with cream cheese
