Start by soaking the noodles and black mushrooms in a large bowl of warm water.

Peel and grate the carrots and place them in a mixing bowl.

Coarsely chop the chicken, shrimp, and green onions.

Drain the black mushrooms and chop them as well.

Add the soy sauce and grated ginger.

Drain the rice noodles, cut them into pieces, and mix well with the preparation.

Spread a heaping tablespoon of the mixture onto a wrapper, then roll it up, folding in the edges. Repeat until all the filling is used. Seal the edge with a water and cornstarch mixture.

Brush with oil using a pastry brush, then cook in the air fryer for 11 minutes at 392°F (200°C).
