Ingredients

25 minutes
4 persons
  • 40 mloil
  • Whole spices
  • 1/2 tspcumin seeds
  • 1-2bay leaves
  • 2-3Fresh green chillies
  • 2medium size onion (sliced)
  • 1 tspginger garlic paste
  • 1carrot (chopped)
  • Handfulnutrella chunks
  • 2 cupsbasmati rice
  • 1/2 cuppudina coriander leaves mixture
  • as per tasteSalt
  • 1/2 tspgaram masala
  • as requiredGrate Nutmeg powder
  • Handfulfried cashewnuts and kishmish
  • as requiredHot water (1:2 ratio)
  • 1 tspghee
  • For pudina coriander mixture
  • 1 bundlepudina (collected leaves)
  • 1small bundle coriander leaves
  • as per tasteSalt
  • 1/2 tspsugar
  • 3-4fresh green chillies (adjust as needed)
  • as required Small piece of ginger
  • 1/4 tsp cumin seeds
  • as per tasteLemon juice (1/2 lemon)
  • as required little water

Steps

25 minutes
  1. 1

    In a blender jar, put pudina leaves, chopped coriander leaves, salt, sugar, cumin seeds, ginger, chillies, lemon juice and little water. Grind smooth. Keep aside.

  2. 2

    Place a pressure cooker. Heat it with oil. Put bay leaves, whole spices and cumin seeds. Add fresh green chillies and sliced onions.
    Saute till onion is brownish.
    Then add ginger garlic paste.
    Cook for some time till rawness is lost. Next add chopped carrot and soaked nutrella chunks.
    Saute all together.

  3. 3

    Next add the soaked and strained basmati rice. Add salt and garam masala.
    Mix all well.
    Next add the pudina- coriander leaves mixture.
    Mix all ingredients very well.

  4. 4

    Next add the fried cashewnuts and kishmish. Mix it too.
    Next add hot water.
    Grate nutmeg. Add ghee.
    Place the pressure cooker lid.
    Cook in medium heat for 2 whistles.
    Switch the flame off and let the rice settle down.

  5. 5

    Open the lid and using a fork fluff up the rice.
    Delicious pudina rice is ready to serve!!
    Serve with raita and salad...
