In a blender jar, put pudina leaves, chopped coriander leaves, salt, sugar, cumin seeds, ginger, chillies, lemon juice and little water. Grind smooth. Keep aside.

Place a pressure cooker. Heat it with oil. Put bay leaves, whole spices and cumin seeds. Add fresh green chillies and sliced onions.
Saute till onion is brownish.
Then add ginger garlic paste.
Cook for some time till rawness is lost. Next add chopped carrot and soaked nutrella chunks.
Saute all together. - 3
Next add the soaked and strained basmati rice. Add salt and garam masala.
Mix all well.
Next add the pudina- coriander leaves mixture.
Mix all ingredients very well. - 4
Next add the fried cashewnuts and kishmish. Mix it too.
Next add hot water.
Grate nutmeg. Add ghee.
Place the pressure cooker lid.
Cook in medium heat for 2 whistles.
Switch the flame off and let the rice settle down. - 5
Open the lid and using a fork fluff up the rice.
Delicious pudina rice is ready to serve!!
Serve with raita and salad...
