Today I have made tasty brinjal gravy bengali style. It's easy and simple recipe. It's goes to with rice or roti paratha.
Steps

First, take potato pieces and brinjal pieces on a plate and add a little turmeric powder and salt, mix it well. Then heat mustard oil in a Kadai and fry brinjal pieces, potato pieces, dry lentil dumplings one by one, golden brown on low flame and take out on a plate and keep aside.

Same Kadai heat oil, add cumin seeds, ginger paste, and saute 2-3 minutes then add red chili powder, turmeric powder, coriander powder, cumin seeds, and salt, and mix it well and cook sometimes. Then add tomato paste and cook.

Now add fried potato pieces and water, cover, and cook another 5 minutes.

Now add fried brinjal pieces and fried lentil dumplings and cook another 2-3 minutes. Lastly, add chopped coriander leaves and mix them well. Bengali Style Brinjal gravy is ready.
