Papaya ice cream

We had quite a few papaya trees in Meenambakkam. Mom used to cook with raw and ripe papaya fruits. Triple digit temperature, too hot, need to have something to cool, get energized with healthy nutrients. So I created this delicious ice cream. Papaya has practically no fat. Fruit is rich with vitamins A, C and beta carotene. Naturally occurring sugars are good, as glycemic index is very low. Good for the whole body, especially for heart, eyes and skin. Easy to make, no egg, no churning in an ice cream machine.

Ingredients

  • 2 cupspapaya (diced)
  • 2 cupheavy cream
  • 2 cup milk
  • 1 cupCondensed sweetened milk
  • 1/2 cup powdered sugar (optional)-
  • 2 cupsmilk cream powder
  • 1 tspvanilla extract
  • Garnish:
  • 2 tbspAlmonds, finely chopped,
  • 1tiny mint sprig
  • ice cream

    Make a checklist. Keep all the required ingredients close by.

    Make a checklist. Keep all the required ingredients close by.Remove the outer rind, and seeds. Dice the pulp into small pieces.

    Add all ingredients (not almonds, and mint) to a blender jar, blend together for 3-4 minutes. Adjust the sweetness according to your taste. Taste the blended puree to see it meets with your level of sweetness, If you feel like blend with some powdered sugar before pouring it to containers for freezing.
    Pour the cream mix into airtight containers, close the lid, and place the containers in the freezer. Ice cream will be ready in 4-5 hours. I froze overnight.

    When you are ready to serve, take it out of the freezer. Dip the scooper in hot water; that would help to get a good scoop out of the ice cream. scoop out into a bowl, top with a tiny mint sprig or finely chopped almonds. Enjoy without feeling guilty. Eating is for pleasure
