Ingredients

  • 8boneless skinless chicken thighs
  • 1 (12 oz)jar roasted red peppers
  • 1 1/2 cup chicken broth
  • 2 tbsunsalted butter
  • 2 cupsfresh spinach plus extra for garnish
  • 1/4 cuponion chopped
  • 2. Tbs garlic minced
  • Olive oil for sautéing
  • 1/2 cupheavy cream
  • 1 cup shredded Parmesan cheese plus extra for garnish
  • Pasta of choice or gnocchi prepared per directions
  • Seasonings for chicken
  • 1 tbspaprika
  • 1/2 tbsonion powder
  • 1/2 tbsgarlic powder
  • 2 tspblack pepper
  • 1 tspsalt
  • 1/2 tbsdried parsley
  • Seasonings for sauce
  • 1 tspblack pepper
  • 1 tsponion powder
  • 2 tspgarlic powder
  • 1 tspsmoked paprika (regular works too)
  • 1/2 tspsalt
  • 2 tspdried parsley

Steps

  1. 1

    Drizzle large sauté pan with olive oil and heat over medium high.

  2. 2

    Mix all seasonings for chicken together. Season chicken liberally on both sides. 3 to 4 minutes on both sides till golden brown and chicken is fully cooked.

    Remove chicken from pan. Sauté onion and garlic over medium heat.

  4. 4

    Add onion and garlic to food processor. Add roasted red peppers. Purée thoroughly.

  5. 5

    Sauce should be smooth. Strain if necessary. Add sauce back to pan. Add chicken broth and butter.

  6. 6

    Cook sauce over medium heat. Add all seasonings for sauce. Cook for 8 to 10 minutes. Taste and re season as necessary.

  7. 7

    Add spinach to sauce. Cook another 2 to 3 minutes to wilt spinach. Add heavy cream.

  8. 8

    Add 3/4 cup of Parmesan cheese. Add chicken into sauce. Cook another 5 to 7minutes.

  9. 9

    Serve over fresh pasta or gnocchi. Garnish with chopped spinach and fresh Parmesan cheese
